dunno why.......... first time I listen this song..... waw....... so awesome..... actually this was sang by Ziana Zain...... I searched online for its original video.... but I couldn't found it.... only this video is exist in the youtube.... the song is originally sang by Ziana Zain but the video was miming by entah porok mana....... but not bad.....
wah....
I like this song.....and fyi..... I spinded this song more than 100 times a day .... hahaha.....

Pastry Shop...

last Thursday.....
our group turn to run a pastry shop...... its a assignment for every group in term 4 to run their business. the reason is to see our creativity, attitude in prepare a couples of pastry to sold and how to organize the pastry kitchen and the pastry shop.......
Man was being our exac.Chef.... and I was being Pastry Chef......
hahaha... funnny.........


we were asked to make 7 types of pastry to sold..... but i think.... we had done only 6 types......
hahaha..... and the minimum sales of the day must be above RM45o...... hah... crazy.....lol
so everyone was rushed to finish all the pastry before sold time...... we only had 2 hour to done our pastry.... my god.......


see....... Red was flatting the tart dough to make egg tart...... while Nik and Shafiq..... like usual... just stand and watch...... hahaha..... still the same.........



Lester and Yeoh was making muffin...... their muffin was sold out on that day....... chayala....... both of them is a good pastry chef......hihihi.....

look nice right...... he saids if u buy one, u would feel want to buy more.....
but trust me..... its really happened......waw.... good

erm...... not too much consumer....... we were worried if we dont get minimum sales that lined by College side...... huhuhu




Shafiq and Nik standed outside to promo our pastry...... haha ya la.... its one of the marketing plan to reach atleast minimum sales....... tapi klo lebih, lagi ok kan.......hehehe

the end of this assigment, after counted all the sales..... we got RM500 something.....
hahaha we got it...... so unbeliveble......
Chef Karam saids.... waw ..... u group move so slow and not organized but still can got RM500..... how come.....? we just laughted.....

2nd Kitchen class.....



haaa.......
last Tuesday, our group again got kitchen class.
2nd kitchen class....
erm..... like usual we came early to make mice en place..... and for this week again I and Lester were working together in da kitchen to produce 2 dish that were asked form the head chef...Chef Fredic......


look...... how busy our group in da kitchen...... everyone was rushing to done their dish..... hahaha



This was my 1st dish......Gaspacho Andalou...... its a juice soup base on tomatoes paste mixed with other vege like cucumber, pepper and etc....
I disliked this dish..... for me its yuks...... Chef said my portion was having good texture and color...... but the taste too spicy.... maybe course I added too much tabasco..... huhuhu too sad....




hah..... this was my 2nd dish....
Carre D'agneo Roti Legumes du Marche....its meant Roast Lamb Rack with Jus.....
wierd names but i liked this dish.....


mmmmm.......
for me the taste was very delicious........ Chef commented that my 2nd dish was torible....
hahaha.... but the lamb was cooked well and the enough taste.... the problem was only at the hollandaise sauce and the side dish....
Chef said.... the souce too thich and dun have enough taste.... the side dish was cooked well but he advised to not using main starter ingredients as a side dish..... course its can make our guest boring with our dish.....
and 1 more......i forgot to wrap the rack bone with aluminium foil before rosting it in the oven..... so the result was the lamb out with burned bone.....
hahaha..... so stupid......

1st kitchen class in term 4...

14 April 2009...

was my 1st class in the kitchen for term 4...
I exited came to this class course all of my group (group 4)
allowed to cook whatever style
that we want on the given ingredients.........


There were 2 person in each station....
I choose  Lester (sabahan boy) as my partner
cuz he have initiative and good attitude in the kitchen.
he also a hard-working person....
I didn't choose my malay friends cuz they are so lazy
and...... ah forget it........


our class would start at 8.00am, I and Lester came
early to make a
mise en place for our food preparation.......
also discussed about all the preparation progress......




On that day,
we were ordered to make Beef Consomme and Beef Steak With Black papper Sauce....
we co-operated
to prepare both of the dishes......
but mainly my duty on prepare the Beef Consomme....
and the
Beef Steak would prepared by Lester....


wah...... its so fun....
our dish finished early than another station...
I had a lot of time to took a lot of pic
till my friend said
"ko dah kenape abg dean......?"
"dah siap ke keje korg....?"
hahaha
jelez la tu........


This was my Beef Consomme.....
Clear and tasty....

Chef commented: very good consomme, clear and enough taste...but there had a bit oil on surface of the consomme.
we can reduce that fat or that oil by trim it with teaspoon, use the tissue paper to absorb the oil or by put the consomme in the chiller, the oil on surface would being solid and easy for us to throw it....


This was my Steak....
erm......sedap..........

Chef Comment: The decoration was not good and not nice. Because the garnish that I arranged was higher than the main course.
we must show the main course more than garnish. The sauce also so thick. My plate that I used was cold. The garnish also cold.
Only my steak that in hot condition when I sent the dish....
But my steak cooked well done. Chef said that, the best steak is must be cooked in medium rare or rare level....
the plate that I used also commented dirty....
I really didn't expect that all of this criteria was count in the marking process....
I thought he just wan to check how we decor and prepare the dish.....
huhuhu...

BTW
it was a 1st class.....
I would try my best for the next class....
I still have many times to improve my mistake on that day.......
